Would 80g Premium Coated Paper on a 62g White Glassine liner be the right call for small-diameter vials and ampoule cartons, and how do we check that before a full run?

80g Premium Coated Paper is specified for the pharmaceutical containers field, which does not mean every substrate in it. Coated paper takes fine print and varnish well, and it takes up moisture at the cut edge. Where the surface is recycled or carries mould release, treat the first roll as a trial.

Is A18601 (80g Premium Coated Paper, High-tack) rated for a cold store, and down to what temperature, and what happens at the low end?

No application-temperature figure is released for this construction, and we will not invent one. Adhesive wet-out decides the low end, and that depends on your line speed and the temperature of the bottle. The declared test condition is 23±2 °C / 50±5 % RH, and a trial roll shows where your own line sits.
